2018 SAY WHEN "WHEN - SPANISH SPRINGS VINEYARD" ARROYO GRANDE PINOT NOIR, CALIFORNIA. 100% Pinot Noir.

Sourced from the SIP Certified Sustainable Spanish Springs Vineyard, this was hand-picked and fermented with native yeast followed by aging in neutral French oak. It is elegant with a medium body with lifted aromas of fruit and spice over cherry compote, silky midpalate and lingering finish.

Rachel (Silkowski) DeAscentiis began her winemaking journey at the age of 18 when she began helping out Brian and Kimberly Loring at their noted winery in Lompoc, CA during the summers while completing her Agricultural Business degree. After graduating, she was hired as as Assistant Winemaker where she worked for five years, mentored by Brian Loring. She soon started making her own wine on the side at their facility with one barrel of Pinot Noir in 2013. This continued as a side project until launching Say When Wine in 2016 with her husband Michel. Based in Lompoc, Say When works with small organic, biodynamic, and sustainably farmed vineyards in Santa Barbara and Paso Robles. Rachel makes wine in keeping with low intervention protocols while Michel is the creative force behind their distinctive, artful branding. Organic, Biodynamic and sustainably sourced.
