About Ployez-Jacquemart works their own predominantly Pinot Noir and Pinot Meunier vineyards in the Premier and Grands Crus villages of Ludes and Mailly Champagne. Tremendous care is taken whilst working these vines by hand ; if necessary, they will even harvest “unripe” grapes to ensure the overall quality of the harvest. Long standing relationships with other wine growers, primarily in the Grands Crus Chardonnay villages helps them improve their “assemblage” and ensure consistency year on year. (Producer) Winemaking Ployez only produces Rosé wines in years when the quality of the black grapes is exceptional. They are all produced by blending Extra Quality Brut champagne (blending the first pressings of premier grand crus with a majority of black grapes), to which a small amount of red champagne is added. Each harvest provides different structures and color intensities. Adding red wine ensurs the color remains stable and precise. It allows Ployez to create an expressive blend delicately combining the expression of red berry aromas and a rich, long finish, while maintaining its intensity. Red wines are produced in oak casks, revealing a very light, elegant hint of woodiness. Minimal dosage is added to allow all of the wine’s fruits and aromas to filter through. (Importer)
