They focus on early harvesting, minimal intervention, and native yeast fermentations to highlight California fruit in a vibrant, contemporary way. The Sea Urchin Sparkling Rosé is a blend of Pinot Noir and Chardonnay sourced from coastal vineyards. Whole-cluster pressed and fermented with native yeasts in barrel, it undergoes secondary fermentation in bottle and is disgorged early to preserve vivid fruit character and freshness. The wine bursts with notes of wild strawberry, cherry skin, and sea spray, carried by bright acidity and a fine mousse. This is a playful yet elegant sparkling rosé—built for seafood pairings (especially uni) or just chilled, joyful sipping.
