2022 ANTINORI CASTELLO DELLA SALA SAN GIOVANNI DELLA SALA ORVIETO CLASSICO SUPERIORE DOC

Castello della Sala, a 14th-century estate acquired by the Antinori family in 1940, is nestled in the Umbrian hills near Orvieto. This historic property spans 600 hectares, with 229 hectares dedicated to vineyards situated at elevations between 220 and 470 meters above sea level. The estate's clay and limestone soils, rich in marine fossils, provide an ideal terroir for cultivating white grape varieties. The 2022 San Giovanni della Sala Orvieto Classico Superiore DOC is a blend of indigenous Grechetto and Procanico grapes, complemented by Pinot Bianco and Viognier. Each variety is vinified separately to preserve its unique characteristics. A portion of the must undergoes cold maceration on the skins for about six hours at 10°C (50°F), while the rest is gently pressed. Fermentation occurs in temperature-controlled stainless steel tanks at 16°C (61°F), followed by several months of aging on the lees to enhance structure and complexity.
