2021 JUS JUS "NIGHT" CALIFORNIA SPARKLING VERJUS. 80% Chardonnay, 20% Muscat Blanc.
Night is a blend of tart, organic Chardonnay from Hawkeye Ranch in Redwood Valley, CA, with aromatic, organic Muscat blanc from First Generation Farmers in Contra Costa, CA. Made with no added sulfites or preservatives. Fermented in the style of a Pét-Nat to just 7% ABV, Jus Jus: Night has one half the ABV of your average sparkling wine.
About: Jus Jus is a collaboration between natural winemaker Martha Stoumen, and cookbook author/writer/photographer Julia Sherman of Salad or President. An all-natural product, made from organic California grapes, with no added sulphur or preservatives. The 2020 vintage is a blend of early season Chardonnay and aromatic, ripe Muscat grape juice. Serve chilled on its own as you would a sparkling wine, or as a spritz. We love how it plays with Cocchi Americano, Lillet and Aperol.
What is traditional verjus?
Verjus is a waste product made popular by French wineries in the middle ages. Early in the growing season, farmers would thin the vines of excess grapes, and vintners would press the fallen fruit. The unripe green grapes make a fresh, tart, unfermented (meaning nonalcoholic) “green juice.” Chefs and mixologists turn to verjus’ refined acidity as the base for delicate vinaigrettes, in lieu of lemon for refined sauces, and as a twist in fancy cocktails.
