Part of the family of wines that includes the acclaimed Jonata and The Hilt offerings, and made by the same winemaker, Matt Dees, The Paring wines are some of the Central Coast's best values in terms of quality for the price, bar none. All the fruit is sourced primarily from organic, Biodynamic and sustainably farmed vineyards in the three prime Santa Barbara regions: Ballard Canyon, Sta. Rita Hills and Santa Maria Valley. Think de-classified versions of the higher-end wines, made in the same style at the same facility. The Sauvignon Blanc was aged in a combination of new and neutral French oak, as well as stainless steel for10 months, lending it an elegance and texture not commonly found among Sauvignon Blancs in this price range. Llemon curd and lime zest aromas are followed by flavors of stone fruit and garden herbs. This has the complexity and flavor of some of our favorite Bordeaux Blancs while retaining Central Coast freshness. Flavorful and refreshing, this is as delicious on its own as with food. Try it with: Oysters and sushi, grilled calamari, creamy risottos and pastas.
