2015 TESTUT CHABLIS 1ER CRU "VAILLONS"
Domain Testut's holding are located in the historic heart of the vineyards traditionally defined by the Cistercian monks in Chablis, the northernmost wine district of Burgundy. The region's cool climate yields wines with naturally high acidity, and its famous Kimmeridgean clay soils impart a distinctively mineral, flinty note to the wines, thus defining its reputation. This comes a plot of 60-year-old massale-selected Chardonnay vines planted to southeast-facing Kimmeridgean soils from the famed 1er Cru Vaillons vineyard, All the fruit is hand-harvested and traditionally vinified at the domaine. The highly developed root system of the old vines allow the plant to reach deep into the soil and extract the minerals for a pure expression of this unique terroir in the glass. With crisp acidity, a fine mineral backbone, creamy midpalate and citrus notes accent by hints of flowers, this is classic Chablis for Chablis lovers. Enjoy with oysters, crab and seafood as well as spring asparagus risotto and creamy pastas.
