In Catalan, the name "azimut" means the line between the sun (energy) and the sea (calm). Owned by the Suriol family, Cellers de Can Suriol del Castell is a small organic estate and winery located in the Alt Penedes, Province of Barcelona, Catalunya. They have been CCPAE certified organic since 2007 (NOP certified before that). The "Azimut" white is a blend of traditional Penedes varietals from a 5-hectare vineyard planted to calcerous clay soils at 250 meters elevation and a slight slope. Vines are kept cool by the breezes from the Mediterranean in the morning and afternoon. Fermentation in stainless steel with native yeasts is followed by secondary fermentation and aging in concrete tanks for three months with battonage. The wine is unfined and goes through lightly filtered with soft paper filter, with only minimal sulfur. Aromatic and unctuous with citrus and stone fruit aromas and flavors, medium body with creamy midpalate and a long finish make this a terrific white for many foods from seafood to dishes with more exotic seasonings and even spice.

The Can Suriol vineyards and winery are situated in Alt Penedes, Province of Barcelona, Catalunya. This region is justifiably famous for producing fine wines and cava.
