Lambrusco that looks and tastes like Blancs de Blancs Champagne? Yes! This is 100% Lambrusco, from selected lambrusco di Sorbara single varietal grape, gathered in small cases by manual harvesting. Christian Bellei is one of Italy’s most Champagne-obsessed producers and founded Cantina Della Volta in the Lambrusco zone north of Modena with the goal of making Champagne quality sparkling wines from the local Lambrusco di Sorbara. This is his take on Blanc de Blancs, achieved by careful pressing and vinifification without skin contact. It aged six months in tank, followed by secondary fermentation in bottle where it ages on the lees sur latte for 34 months to develop additional complexity and bouquet richness. It is then disgorged and bottled-- all according to the traditional Champagne method--to yield a magnificent sparkler that makes you think twice about the potential for Lambrusco.
Winemaker's Notes: "Pale yellow color with greenish hues, lively and persistent effervescence that finds its ultimate expression in a fine, uninterrupted and lasting crown. The expressive and masterful nose reveals pleasant floral scents combined with distinctive notes of fruit (apple). The attack is large, dynamic, round and velvety. It happily matches with the elements identified in the olfactory phase."
