Allegrini is a legendary producer located in the Valpolicella district of the Veneto in Northeastern Italy; here the Allegrini family has played an important role in agriculture and winemaking in Valpolicella since the 16th century.

Palazzo della Torre is made using an innovative take on the ripasso technique: most of the grapes are vinified at harvest time, while the rest are set aside to partially dry. In January, the wine blended with the juice from the raisined grapes undergoes a second fermentation to yield a full-bodied red wine that has an ageing potential of at least ten years. The blend is the historic combination of Corvina and Rondinella with the addition of a small quantity of Sangiovese. Recommended with saffron-flavored risottos, porcini mushrooms and pork; pastas with Carbonara sauces, baked lasagna, gnocchi with gorgonzola cheese and walnuts; grilled meats and roasts.
