2011 CLOS LENTISCUS "PERILL NOIR" SUMOLL PENEDES, SPAIN. 100% Sumoll. (Organic/Biodynamic/Natural)

About: Clos Lentiscus is a project aimed at producing wines like those that were made in the past. Wines that are respectful with the land, using classic cultivations methods without pesticides or herbicides. Using the moon as a guidance to plant, prune and harvest, and respecting the wine in the bottling process. A family-run winery located in the heart of the natural park of Garraf. Its vines are mainly planted on sandy-calcareous soils, facing south. Around 20 hectares mostly planted with local varieties and following the biodynamic method. Harvest is performed by hand. Destemmed and with a maceration process of 15 days. Fermentation is carried out with local yeasts. It is left to age in French oak barrels for 30 months. A noble and extremely elegant wine. Ripe red fruit and wild flower aromas, accompanied by soft toasting, show us all this variety's potential.
